3 Great Maritime Desserts

Blueberry Muffins

A favorite served with your morning coffee.

½ cup shortening
¼ cup sugar
1 egg, unbeaten
1 cup milk
1 tsp salt
3 tsp baking powder
3 cup flour
¾ cup blueberries

Cream together the shortening and sugar. Add in the egg and milk and mix well. Sift together and add the flour, baking powder and salt. Mix well and then add the blueberries and stir them in. Drop spoonfuls into paper baking cups in muffin tins and bake at 350 F oven. Test with toothpick to see when they are done.




Apple Bread

Tasty Annapolis Valley apples are great used in this recipe.

2 cups apples pared & cored
1 cup shortening
2 cups sugar
4 eggs
1 tsp salt
2 tsp vanilla
2 tsp baking powder
4 cups flour
2 tsp baking soda

Do your apples in a blender or mash them. Mix together and bake in loaf pans in 350 F oven until toothpick comes out clean. Makes 4 loafs.



Blueberries in a Casserole

I like the wild blueberries that grow in the Annapolis Valley for this recipe.

2 eggs
1 cup sugar
8 tsp salt
1 tsp baking powder
1 tbsp butter
½ tbsp vanilla
½ cup milk
1 cup flour

Put blueberries in 1 inch deep pan. Mix other ingredients together to make a cake batter. Cover blueberries with cake batter. Sprinkle a little cinnamon or nutmeg and sugar on top. Bake 30 – 40 minutes in 350 F oven.
