Great Maritime Dessert Recipes

There are great Maritime dessert recipes to be found around the Annapolis Valley. We grow an abundance of fruits here from apples, blueberries, strawberries, pears, plums, peaches, raspberries plus so much more. With this amount of fruits around you know people have come up with great ways to serve them. Here are a few of my favorites and hopefully some of yours to.

Blueberry Fungy

  • 1 quart blueberries
  • 1/2 cup sugar
  • 1/2 cup water

Put berries, sugar and water in a pot. Cover, boil gently until there is plenty of juice.

  • 2 cups flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tbsp butter
  • 1 tbsp shortening
  • 1/1 cup milk

Mix flour, baking powder, salt and sugar into a bowl. Cut in butter and shortening. Add enough milk to make a stiff biscuit dough. Drop by spoonfuls into hot blueberries. Cover - DON'T PEEK for 15 minutes.

 

Old Fashioned Fruit Crisp

  • 5 cups of peeled, cored/pitted and sliced apples, pears or peaches
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup rolled oats
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 1/2 cup margarine

Pre-heat oven to 350 F. Arrange fruit in an even layer in an 11 x 7 baking dish. Combine flour, brown sugar, rolled oats, cinnamon and nutmeg in a bowl. Blend in margarine with a pastry cutter or rub with your fingers until mixture is crumbly. Sprinkle oat mixture evening over fruit. Bake for 35 - 40 minutes until topping is lightly browned and fruit is tender and bubbly. Serve warm with whipped cream, frozen yogurt or ice cream.

 

Bread Pudding

Cut 3 slices of bread into 1/2 inch squares. Heat 1 cup of milk and pour over the bread squares. Add 3 tsp. margarine. Add:

  • 3 eggs (beaten)
  • 1/2 cup white sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg
  • 1 cup raisins

Pour in greased bake dish and let stand in a pan of hot water for 5 minutes. Place in oven and bake for 35 to 40 minutes or until custard is formed.
