Maritime Entertaining Recipes

These entertaining recipes are great for the holidays, big get-togethers or when you just have a few friends stopping by. The people of the Annapolis Valley enjoy visiting with family and friends and we always like to have something on hand to serve our guest. Here are some of the more popular or Maritime type recipes for entertaining. If you have a favorite we would love to hear about it also. Tuna Buns

  • 1 can tuna
  • 2 hard boiled eggs
  • 1/2 cup small pieces cream cheese or you can use grated cheese
  • 3 tbsp onion grated
  • 1/4 tsp mustard
  • salt & pepper to taste
  • just enough miracle whip to moisten
  • hamburger buns

Mix all ingredients together in a bowl. Spoon onto the hamburger buns and then wrap in tin foil. Heat in 350 F oven for about 20 minutes.

 

Seafood Cocktail

  • 1/2 cup catsup
  • 1/4 tsp. salt
  • 2 tbsp. vinegar
  • 1 tsp. grated onion
  • 1/8 tsp. Tabasco sauce

Mix all ingredients together well in a bowl. Serve cold with your favorite seafood, ex. cooked shrimp, lobster or scallops.

 

Dandelion Wine

This recipe is taken from "Gramma Gert's Country Cookbook" by Gertrude Rice Whitman.

Pick two quarts of dandelion blossoms, well-packed, Pour one gallon of cold water over the blossoms and bring to a boil. Boil for twenty minutes and strain. Add three pounds of sugar (6 cups), the juice of two lemons, and boil for another twenty minutes.
Let cool, and when luke-warm, put in a crock or similar container.
Let stand for four weeks, skimming every day.
After four weeks, draw off and bottle, making sure the bottle has tight caps.

 

Piggy’s in a Blanket

  • 2 1/2 cups Bisquick
  • 1 egg
  • 1 tsp oil
  • 1 1/2 cups cold milk
  • wieners or sausage cut in approximately 2 inch lengths

Mix together the bisquick, egg and oil in a bowl. Gradually stir in the milk until you have a medium stiff dough. Roll out to 1/8 inch thickness. Cut in two inch strips and wrap around wiener or sausage and place on cookie sheet with the folded side down. Bake in 350 F oven for 15 - 20 minutes or until golden brown. Let cool before serving.

 

Devilled Eggs

  • eggs (as many as you want)
  • mayonnaise
  • 1/4 tsp. prepared mustard
  • salt & pepper to taste
  • paprika

Boil the eggs until they are very hard boiled. Remove from heat and drain. Run cold water over them and let stand in the cold water until cool enough to handle. Remove the shells and cut in half lengthwise. With a spoon carefully carve out the yokes and put in a bowl and mash. Add mayonnaise, prepared mustard salt & pepper and mix well. Spoon back into egg whites in the hole left by the yokes. Garnish with paprika.
