Homemade Ice Cream Cake

by Lindsay M.
(Annapolis Valley)

We really enjoy this great recipe, it goes over great at our kids birthday parties.

1 chocolate brownie mix or cake mix

Chocolate fudge sauce

2-2 litre ice cream – different flavours

2 Skor bars

1 pint whipping cream

Cherries for decorations

½ cup strawberry or raspberry jam

Bake cake in cake pan, (any size). Cut in pieces and layer in 9 x 12” pan.

Soften ice cream so it is easier to spread.

Whip cream stiff.

Break up bars.

Layer all ingredients ending with whipped cream, broken bars and cherries on top.

Keep in freezer until 10 minutes before serving. Be creative!

You can bake the cake in the pan and leave in one piece if you want.
