Tasty Seafood Casseroles
There are some great seafood casseroles and we make a lot of them in the Maritimes. Why wouldn't we? Like I mentioned before we were mostly brought up with seafood so our grandmothers and mothers had to find different ways to cook it to keep it interesting. Here is the Annapolis Valley we also love to hold "Pot Luck" suppers a lot. The best thing to take to a "Pot Luck" supper is a casserole, so we came up with a lot of varieties. Below I have shared some of my favorite recipes for different seafood casseroles. If you have a favorite we would love to hear about it also. Lobster Casserole
- 1 can of cream of mushroom soup
- 1/2 cup milk
- 1/2 lb cooked lobster
- 1 1/4 cups crushed potato chips
- 1 cup peas
- 3 cooked eggs (chopped)
Mix the soup and milk together. Add the lobster, 1 cup of chips, peas and chopped eggs. Put in casserole dish and then top with rest of the crushed chips. Bake in 350 F oven for 20 - 30 minutes.   Seafood Casserole
- 1 litre of milk
- 1/2 cup flour
- 1/2 cup margarine
- salt & pepper to taste
- 1 can mushrooms
- 1 can cream of chicken soup
- 1 lb haddock
- 1 lb. raw scallops
- 1 can or a cup full of lobster or shrimp
- 1 1/2 bread crumbs
Mix the first 6 ingredients together in sauce pan and cook over low-medium heat until thickening. Place your fish, scallops, lobster or shrimp in bottom of casserole dish. Pour the sauce mixture over the seafood. Stir in 1 cup of the bread crumbs and sprinkle the rest over the top. Bake at 375 F oven for about 45 minutes.   Baked Tuna & Cheese Casserole
- 1 cup macaroni
- 2 cans drained tuna
- 1/4 cup slivered olives
- 1 can diced carrots
- 1/2 cup margarine
- 1/2 cup seasoned bread crumbs
- 1/4 cup flour
- 1/4 cup onions sliced
- salt & pepper to taste
- 2 1/2 cups milk
- 1 cup sharp cheddar cheese
Cook Macaroni and drain. Turn on the oven to pre-heat to 375 F. Mix together the macaroni, tuna, carrots and olives in a 2 quart casserole dish. Melt margarine and add 1 tbsp to the bread crumbs and mix together. Use the rest of the margarine to sauté the onions until golden brown. Remove from heat and add the flour, salt & pepper and stir until smooth. Gradually add the milk. Replace on heat and bring to a boil and let boil for 1 minute. Reduce heat and add in the cheese stirring until all melted. Add to tuna mixture mixing well. Sprinkle the bread crumbs over the top. Bake for 20 minutes or until golden brown and bubbly.
