Great Maritime Seafood Recipes

What better place to find seafood recipes than the place that has the best seafood? Here in the Annapolis Valley we have lived our lives on seafood and we have come up with some great ways to cook it. This is where we can share some our favorite recipes with everyone.

Below I have shared some of my favorite recipes for different seafood dishes. If you have a favorite we would love to hear about it also. Just use the form on the bottom of this page and share your great seafood recipes with us.

 

Baked Haddock Fillets

  • 1/3 cup butter or margarine
  • 1 med onion chopped fine
  • 1 1/4 lbs fresh haddock fillets
  • 3/4 cup milk
  • about 7 crushed crackers
  • salt & pepper to taste

Melt the butter or margarine in a 1 1/2 quart casserole dish and let simmer 5 minutes. Cut the haddock fillets into small pieces and add to the butter. Pour milk over fish and add salt and pepper. Sprinkle the crackers crumbs over fish and dab with a little butter or margarine. Bake 45 minutes in 325 F oven.

 

Fish Cakes

  • 1 1/2 lbs fish (Cod, haddock or whatever you would like to use)
  • 4 med to large potatoes
  • 2 small onions
  • 1/4 cup butter or margarine
  • a little oil or bacon fat for frying

Put the fish in a pot with cold water, cover well and bring to a boil. Drain, add more cold water and bring to a boil again. Add the potatoes and 1 onion. Cook until the potatoes are done. Remove from heat and drain. Add butter or margarine and the other onion (chopped). Mash well and then form into cakes about 2 inches each way and about 1 inch thick. Fry in the oil or bacon fat (bacon fat gives a better flavor) until crisp and brown on both sides.

 

Fried Cod Cheeks

  • 1 lb fresh cod cheeks (May use any fish cheeks you like)
  • 1 egg (beaten)
  • 1 cup rolled cornflakes
  • salt & pepper to taste

Dip the cod cheeks into beaten egg, season with salt & pepper. roll in the crushed cornflakes and cook in a hot greased frying pan for 10 to 15 minutes or until brown on both sides.

 

Seafood Lasagna

  • 2 tbsp margarine or butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 can cream of mushroom soup
  • 1 can crab meat
  • 1 lb small scallops
  • 1 small can broken shrimp
  • 1 pk. lasagna noodles (prepared)
  • 1 pk. grated mozza cheese

First melt the margarine or butter in sauce pan. Add the flour and cook until bubbly. Add the milk and stir. Cook over medium heat until it has thickened. Add the mushroom soup, crab, scallops and shrimp. Heat thoroughly. Layer this mixture with lasagna noodles and mozza cheese. Bake at 350 F oven for 1/2 hour.
