Maritime Soups and Stews

These soups and stews have been cooked in Annapolis Valley kitchens for generations. They have proven to be a favorite dish to "come home to".

Here in the Maritimes we prefer a dish that is going to warm the bones and fill the tummy, we do not need anything too fancy.

Some of these recipes may be very similar to other soups and stews from across Canada, but others are truly Maritime, like the Hodge Podge. No matter what province we may move to, we were brought up on these great meals. They all bring back fond memories of sitting with the family at the dining room table discussing the day's events while enjoying good food.

Hodge Podge

  • new small potatoes from the garden (if too big cut in half)
  • new tender small carrots from the garden (Cut into bite size pieces)
  • peas from the garden
  • beans from the garden
  • an onion from the garden
  • 1 litre of blend
  • tbsp of margarine or butter

You can use any combination of garden vegetables you would like for a Hodge Podge, fresh from the garden are the best. Prepare the vegetables, add salt and put in big pot with just enough water to cook them without burning. Start with the vegetables that will take the longest to cook and add the others accordingly so they are all done about the same time. I drain most of the water off now. Add the blend and margarine or butter, salt and pepper to taste and heat just to the boiling point. Serve hot. This makes a complete meal with lots of vitamins and nutrition and taste so good.

 

Hamburger Soup

  • 1 - 1 1/2 Lbs hamburger
  • 1 large onion chopped
  • 3 potatoes cubed
  • 1 cup carrots chopped
  • stalk of celery chopped
  • any other vegetables you would like (peas, corn, green beans etc.)
  • 1 pkg. onion soup mix
  • 3 1/2 cups water
  • 3 pkg. beef OXO
  • 1 can tomato soup
  • 1 can diced tomatoes
  • 1 can mushrooms
  • 1 tsp garlic
  • 1 tsp seasoning salt
  • 1 tsp basil leaves

Brown the hamburger and onions together. Put this into a large pot along with the other ingredients and simmer until all the vegetables are done. Makes a hearty soup that they will keep coming back for more.
